Specially selected ideas and activities to make the most of your time at home
This is a very quick soup for dinner. Just fry some garlic in a pot with some olive oil, peel and chop sweet potato, carrots and pumpking and add to the pot (any of the three or all of them will do a great soup, but I find sweet potato is the best). Add boiling water and cook until tender. Then peel a couple of kiwis, add them, season and blend. Serve with some kiwi diced on top. Dinner is readyyyyy!
This recipe was inspired by the great book Keep it vegan by Aine Carlin. As she mentions in the book, if you keep the sweet potato peel, toss them with a bit of olive oil and roast them in the oven, they make a great topping, although little ones might find them a bit difficult to chew on, so keep an eye!
