i am on a hurry, chinese curry!

As the tittle says, if you want a nutritious meal under 25 mins, this dish is for you.

  1. Cook some rice.
  2. In a pot, add some sunflower oil. Chop onions in medium chunks and add to the pot at medium heat. Peel some carrots and chop them in small but chunky slices. Fry for 5 minutes until the onion has soften a bit.
  3. Cut a block of firm tofu into cubes (whatever size you like) and add them to the pan (at this stage you can also add a cauliflower if you have some time, but it is not essencial)
  4. Add boiling water until you nearly cover the veggies, but not too much and boil for 5, 7 minutes.
  5. Get some chinese or japanese curry paste and add a few spoonfuls in a cup with some boiling water and mix until disolved. Add to your veggies and boil for another 5 to 10 minutes depending how soft you like your veggies.
  6. Serve in a plate with some chopped tomatoes and enjoy!

Curry paste is a great and handy thing to have around. Depending on how strong you like your flavours and how thick you like the sauce, you can add more or less and you can do it at any point, even when you have finished the dish. Just bear in mind not to add too much water or the sauce will be very runny.
