colours and textures medley

This dish is just an idea of how you can mix leftovers, create new alternatives and incite your kids to try new textures and flavours.

  1. Boil some grains, any can do, like quinoa, barley, buckwheat, with some boullion or veggie stock.
  2. In a blender, (high speed blender even better) make a pulses hummus, you can use the classic chickpeas, but I didn’t have any so I did one with red kidney beans. Add your pulses, olive oil, salt, cummin, lemon juice, tahini paste, water and any other flavour you fancy (I added some sundried tomatoes and oregano) and blend until smooth.
  3. Pan-fried pattie: on a mixer, add two handfulls of walnuts, a tin of lentils, a spoonful of tomato paste, half a cap of breadcrumbs, a dash of soya sauce, and if you have some vital wheat gluten (depending on how chewy you like it, add more or less) or some flour if you don’t have gluten. Also add whatever flavours you like (I put some oregano, garlic and onion powder, a bit of liquid smoke, a bit of paprika) Blend until you have a paste that you can handle. Then make round patties and pan fry with a bit of sunflower oil.
  4. Arrange all the above in a plate with some fresh cut slices of veggies like cucumbers, peppers, celery and some fruit like strawberries, oranges or kiwi.
  5. Enjoy!

There are no measurements to this recipe as I am just trying to give you some inspiration to be flexible with food options and encourage you to be adventurous to try new things plus I genuinly cook without measurements most of the time.

Textures are as important for the mouth as they are for the touch or the smell. so let your kids dip the strawberries in the hummus or add extra water to the grains. The important thing is that they explore to get used to new things.
